Tonight I tried a new recipe I found in a magazine for chicken alfredo. I bought all the ingredients at the store last week and have been waiting for a good night to try it. Tonight was that night. It really didn't take me as long as I had anticipated and our house smelled delicious. McKenzie and I waited patiently for Daddy to get home...well one of us waited patiently...but you know the other one of us is only 1 (lol). I added fresh broccoli for a veggie and we sat down to eat. Daniel had NO words but the big smile on his face said it all. Dinner was a success! McKenzie gobbled down her portion as well.
I'm trying very hard to cook every night and save of loads of money this year by not eating out as much. So far we've done pretty darn well. With that being said, I'm asking you (my wonderful readers) for your favorite (yet easy) recipes. And for being such great participaters...I'm giving you mine :)
Creamy Chicken Alfredo
Cooking time: 45 minutes
Serves 6
Preheat Oven to 375
Ingredients:
1/4 cup all-purpose flour
1/2 tsp. salt
3 cloves garlic, minced
1 1/2 cups whipping cream
1/2 tsp. coarsely ground black pepper
1 tablespoon coarsely chopped fresh parsley
6 chicken breasts
2 tablespoons + 1tsp olive oil
1 tablespoon minced oinon
1/3 cup grated parmesan cheese
* For a butter flavored sauce, substitute butter for the olive oil ( I did this!)
Directions:
Preheat ove to 375 F
Place flour in a shallow dish
Sprinkle chicken with salt and coat with flour
Heat 2 tablespoons olive oil in a large skillet over medium-high heat until hot
Add chicken; cook, turning once, until golden
Remove chicken from skillet and place in a 13x9 inch baking dish
Heat remaining olive oil (or butter) in same skillet over medium heat until hot
Add garlic and oinon; cook until garlic is fragrant and oinon is tender (about 1-2 minutes)
Increase heat to medium-high; add whipping cream, parmesan and pepper
Cook until sauce is bubbly and slightly thickened (about 2-3 minutes)
Spoon sauce over chicken in dish
Bake chicken until thoroughly cooked
Sprinkle with parsley
Add already cooked noodles before serving
